For the pesto:
1 1/2 cups fresh basil
1/4 cup pine nuts
2 cloves garlic
1/2 cup extra-virgin olive oil
1/2 cup freshly grated Parmesan cheese
3/4 teaspoon salt
For the pizza:
1 ball pizza dough
Shredded mozzarella
Shrimp
Olive oil
Kosher salt and freshly ground black pepper
Pesto
Preheat the oven to 500 degrees
In a skillet, heat olive oil and add the shrimp. Season with salt and pepper and cook the shrimp, just until they are pink on the outside (they will continue to cook in the oven). Set aside to cool slightly.
To make the pizza, spread a thin layer of pesto over the dough. Top with mozzarella and then top with the shrimp. Brush the edges of the dough with olive oil. Bake 8-10 minutes until the cheese is melted and the edges are browned.
YUM! This looks way better than the pizza I had at Cheebo! Those shrimp are so cute and pink! :)
ReplyDeleteGorgeous! I am usually very anti-seafood on pizza, but I had a takeaway near me a few years back that did a lovely pizza bianco with prawns, tiny pieces of lemon and cubes of feta which brought me around. And your crust looks even better than the ones they used to do!
ReplyDeletethat is beautiful! i'm not much of a shrimp person - it's the texture. but the color here is gorgeous, and i'll bet the pesto goes nicely with the shrimp!
