Crepes

Prosciutto Mozzarella and Basil Crepes with Balsamic Reduction

Yesterday I went out for crepes. Though they were delicious, I felt a little guilty because I had recently discovered how easy it is to make crepes at home. When I made my own I did a mix of sweet and savory crepes. The savory filings were leftover from my poached eggs with prosciutto and basil. I topped them with a bit of balsamic reduction and the sweet, tart sauce was a perfect compliment to the creamy cheese and salty prosciutto. As you know, I'm obsessed with strawberries and Nutella so it was only natural to stuff that combination into a crepe. I love the added crunch of the pistachios. Besides the endless flavors you can put into crepes, one of the best things about making your own is that you won't have to stand in long lines to get your fix. Strawberry and Nutella Crepes




Crepes

Makes about 6 8-inch crepes

1/2 cup flour
1 egg
3/4 cup milk
1/8 teaspoon salt
1 tablespoon butter, melted plus extra for the pan

Mix all the ingredients together in a bowl. Preheat an 8-inch pan over medium heat and brush with a bit of butter. Using a quarter cup measure, pour the batter in the pan and swirl the pan around so that the mixture evenly coats the bottom of the pan. Cook for about 2 minutes until the crepe has browned on the bottom. Flip, and cook for another 2 minutes until the other side has browned.

I was transported back to Paris just now, where I sat on a churchyard bench with my sister on a summer's day 7 years ago, eating crepe chocolat-banane purchased from a street vendor. I am torn between calling that my favourite, because the savoury cheese and ham demands consideration too...Can I call a tie?

I'd like an order of one of each. Haven't made crepes in ages.

Sometimes my mom makes them and puts chili, sour cream, cheese and avocado and/or salsa inside. A full meal!

Make them all the time! I put swiss and peppered turkey in simple, savory crepes for on-the-go, and sour cream and raspberry jam with a squeeze of lemon juice and dusting of powdered sugar for a quick, sweet treat. I save some ready-made crepes in the fridge or freezer for anytime cravings. Love!

I don't have a favorite crêpe filling because I have never eaten crêpes before! I do not know why. I need to remedy that right now. I love the look of your strawberries and nutella crêpe. I guess I would make something with fruit and chocolate.

I was the same as you until when I found out the simplicity of making them at home. Though, that wouldn't stop me from going to my favorite crepe place. Hehehe...

My favorite crepes I've ever had were these pumpkin filled crepes that I had after I ran my first marathon. They were just what I needed to perk me back up. I love all of your filling ideas!

Yep, crepes are easy easy to make. They're awesome for breakfast or dinner. Digging the eggs, proscuitto and basil! Savory tops the list for crepe fillings. The last batch had spinach and chicken, and they rocked.

Love ze crepes! And you're so right, they're super easy to make. My mom makes them all the time. I like sauteed spinach and ricotta cheese for a savory and boysenberries/raspberries and whipped cream for a sweet. YUM I want some now!

I love crepes with just eggs, gruyere (or something similar), tomatoes and some basil. Simple, but delicious! :)

I like how versatile crepes can be. I have been on a sweet spree with crepes recently and I think it's time to do some more savoury ones.

This is awesome! We had a foreign exchange student from France when I was in high school and she used to make crepes ALL the time. I loved it & now have forgotten how to make them. Thanks!
