Herbed-Baked Eggs

I hope you are all well on this historic morning. It's quite exciting, isn't it? I am trying to get out of the house a little early to make sure I don't miss a minute of the festivities. This is a recipe that I wanted to bring you last week, but I burned it so that went out the window (scroll down to see the pic, I'm not kidding!). I have been wanting to try Ina's herbed-baked eggs for a while. The first them I did them, I made them in the broiler, hence the burnt top with really underdone eggs. Maybe my broiler is hotter than Ina's. The next time, I did them in the oven and they came out perfect. I loved the savory mix of herbs and the tomato quinoa bread went really well with the eggs. I lightened these up a bit by using non-fat milk in place of cream and Earth Balance in place of butter. It definitely wasn't as rich as I am sure Ina intended, but it was still really good and as I said before, the savory flavors were outstanding.

Change is in the air and it feels sooo good!

Herbed-Baked Eggs
(Adapted from Ina Garten)

1/8 teaspoon minced fresh garlic
1/8 teaspoon minced fresh thyme leaves
1/8 teaspoon minced fresh rosemary leaves
1 1/2 teaspoons minced fresh parsley
1 1/2 teaspoons freshly grated Parmesan
2 large eggs
1/2 tablespoon milk (I used non-fat)
1/2 tablespoon unsalted butter (I used Earth Balance)
Kosher salt and freshly ground black pepper
Toasted bread, for serving

Preheat the oven to 375 degrees.

Combine the garlic, thyme, rosemary, parsley, and Parmesan and set aside. Carefully crack eggs into a small bowl or teacups (you won't be baking them in these) without breaking the yolks. (It's very important to have all the eggs ready to go before you start cooking.)

Place 1 gratin dish on a baking sheet. Place 1/2 tablespoon of cream and a small pat of butter in the dish and place in the oven for about 3 minutes. Quickly, but carefully, pour the eggs into the gratin dish and sprinkle evenly with the herb mixture, then sprinkle liberally with salt and pepper. Place in the oven for about 15 minutes until the whites of the eggs are almost cooked. (Rotate the baking sheet once if they aren't cooking evenly.) The eggs will continue to cook after you take them out of the oven. Allow to set for 60 seconds and serve hot with toasted bread.

I make eggs for my fiancee every weekend and I think I'll have to throw these into the rotation.

I love Ina Garten's recipes. They work so well.

mmmm. those look so good! you and i must be on the same wave length with the eggs! i really enjoy them baked :) the non-burnt ones do look better ;)

These look perfect. I love a nice egg dish, and they seem to be all the rage in the blog world these days.

Oh and I completely agree with you about Gossip Girl - best thing on TV. Blair and Chuck make the show.

Oh Esi, this looks so good. You know, I like Ina's recipes, I don't know why I don't actually make them. Especially when I'm looking at your herbed baked eggs. I think I'd prefer the baking method myself, too. YUM! PS: Love the little one's quote! It's been such an exciting day. I'm so hopeful for a brighter future!

These eggs look great but oops on take 1 ...last week my friend wandered into my kitchen just as I took the rather burnt oven chips out for the kids supper, and I only cook them once in a while!! It always happens!! (heehee)

I enjoyed the ceremony and everybody's optimism. I think change is afoot and it will be interesting to watch it unfold.

And so are those eggs. I first baked eggs using Delia Smith's recipe, and now I love playing with them.

I've done these herb-baked eggs before and thought the flavor was awesome. We did execute some changes, though.

First, I only have creme brulee ramekins, so I used a regular stainless steel saute pan. I think the thickness of it helped mine cook quickly. That being said, my yolks were well done by the time the top looked just right. I might have to try a smaller pan so the eggs are a little thicker.

Second, I didn't have all the fresh ingredients on hand, so at least one of my herbs was dried. I forget which. But it still turned out great. We ate the endive salad with it (which was not our cup of tea) and some good ol' crusty bread. All in all, we gave it 4 out of 5 stars.

Fiona, I guess we all have our kitchen disasters once in a while :)

Jillian, I love the end of each episode when all the crazy things happen and then they tease you with the following week! I can't believe I gave up on GG for a while last year!

Dee, there are soo many recipes for baked eggs, the possibilities really are endless!

Melanie, That's interesting that you used a pan instead of ramekins. My ramekins are small which is why I switched from broiling them to actually baking them, they were a little over done, but really good though.

I made a variation on this recipe this morning and it was absolutely perfect. I used 2% milk and only the rosemary. Instead of chopping the garlic, I actually made a garlic oil and drizzled a little bit of it over the top of the baked eggs. Delicious!
