Shaved Asparagus Salad

Like many people, I have been planning just how many of the salads I can make on Mark Bittman's recent list of 101 Summer Salads (Kelly of Sass and Veracity is going to make them ALL). I went through the list several times and highlighted the salads I wanted to make immediately. This was one of the first and it was especially helpful that I had a bunch of asparagus in my refrigerator that was in danger of going bad. While you're shaving the asparagus, boil the eggs and you have delicious dish in no time. It's fresh and filling and definitely will not weigh you down. This is definitely a good recipe to have on hand as I start my quest of looking awesome by my 30th birthday. Wish me luck!!

Shaved Asparagus Salad

Shaved Asparagus Salad
(From Mark Bittman aka #4 from The List)

Makes 1 serving

1 bunch large asparagus, shaved with a vegetable peeler, leave the tips whole
1-2 eggs, hard boiled and cut into chunks
Extra-virgin olive oil
Lemon juice
Salt and pepper

Mix the oil, lemon juice, salt and pepper to taste and toss with the asparagus. Top with the cut up eggs and serve immediately.

I recently ate raw asparagus for the first time and LOVED it. This salad sounds great, <3 Mark Bittman!

OMG that looks delightfully delicious! I love that the asparagus is raw and shaved thin, paired with the cooked egg. Hmm..I might have to shave some parm-reg onto it when I try it ;D Beautiful photos too! Also, thanks for posting that Bittman link! I think I'd like to try them all myself!

What a phenomenally simple salad -- but it looks positively delish.

Unlike others, I have NOT been contemplating Bittman lately... :) in fact, to be honest, he's never been one of my favorites. But, I'm starting to rethink.

HOW in the world do you your hard-boiled eggs retain such a vibrant yellow color, with no greenish discoloration??!!

Mmmm...raw asparagus! This is a gorgeous salad and one I haven't tried yet. I love the flavors because they remind me of what goes into hollandaise, of course ; ) I've done 5 salads in 7 days. The sixth is tonight.
